Three of the cooking methods represented in this catalog work by holding food at moderate temperatures for a long time, and one of them works by removing air. Both of those descriptions should make anyone thinking about food safety pay attention, because bacterial growth is a function of temperature and time, and oxygen removal changes which organisms are a concern rather than eliminating the concern.
None of these methods is dangerous when used as designed. All of them have a specific failure mode that comes from a plausible misunderstanding of how the appliance works. The temperature range everything else is about
Food safety guidance in the United States centers on a range roughly between 40 and 140 degrees Fahrenheit, in which bacteria multiply most readily. The whole of safe slow cooking, thermal cooking and cold storage is about controlling how long food spends in that band.

Slow cookers: the mistakes are all at the start
A slow cooker is safe because it brings food through the danger band and then holds it above the band for hours. The failure modes are all things that delay that first part.

Thermal cookers work on stored heat, so the boil is the control point

Because nothing adds heat after the lid closes, the temperature only falls. That makes the initial boil the entire safety mechanism. Vacuum sealing: removing air is not preserving
This is the most widely misunderstood method of the three. Vacuum sealing slows spoilage by removing oxygen, which suppresses the aerobic bacteria and molds that make food look and smell bad. It does nothing to suppress anaerobic organisms, and one of those, Clostridium botulinum, produces a toxin and thrives specifically in low oxygen conditions.
The practical consequence is that vacuum sealed food is refrigerated or frozen food, not shelf stable food. A sealed bag on a counter is a worse place for perishable food than an unsealed one, because the visual and olfactory warnings that would normally tell you something is wrong have been suppressed while the anaerobic risk has not. The habits that cover most of it
Use a probe thermometer rather than trusting an appliance’s own reading, since the appliance measures its vessel and you care about the food. Cool leftovers fast and shallow. Label anything sealed or frozen with a date, because vacuum sealed food looks the same after four months as it did on day one. Thaw in the refrigerator rather than on a counter.
