Nonstick coatings fail for predictable reasons, and almost none of them are manufacturing defects. They fail because someone reached for a metal utensil, because a basket went into a dishwasher the manufacturer never approved it for, because a pan was heated empty, or because a stubborn baked on patch got attacked with something abrasive. A coating that is treated within its limits usually outlasts the appliance it is bonded to. A coating that is not can be visibly damaged within months.
The complication is that not all nonstick is the same material, the care instructions differ between types, and the specification data on product listings is frequently contradictory about the one question that matters most: whether the part can go in a dishwasher.
Know which coating you are dealing with
Broadly there are two families in the kitchen appliances on this site. The first is fluoropolymer coating, the traditional slick gray or black surface applied to aluminum. It is genuinely nonstick, it tolerates repeated thermal cycling well, and it is soft. Its enemies are physical abrasion and high dry heat.
The second family is ceramic, more accurately a silica based sol gel coating. It is harder and more scratch resistant in the short term, but it loses its release properties over time and with heat exposure rather than by being scratched. The GreenLife mechanical air fryer lists a ceramic interior, and the GreenPan ceramic nonstick rice cooker lists a coating the brand describes as free of PFAS, PFOA, lead and cadmium. Those claims are the manufacturer’s, and they are about the coating chemistry rather than about durability, which is a separate question.
A third case exists and is easy to miss: appliances with no coating at all. The Bethany Heritage griddle lists nonstick coating as no and dishwasher safe as no. That is a bare aluminum cooking surface, which is maintained by seasoning and by never soaking it, and which behaves nothing like a coated plate. Applying coated pan habits to it will give poor results, and applying bare metal habits to a coated pan will destroy the coating.
The dishwasher question, and why the data contradicts itself
This is the single most common way coatings die early, and the listings are not much help. Two separate listings of the same Ninja DualZone air fryer illustrate the problem exactly. The 8 quart entry records the item as not dishwasher safe. The 10 quart entry for the same model number records it as dishwasher safe. Both cannot be right for the same part, and neither is a substitute for the manual that ships in the box.
Where a listing does say yes, it usually means the removable basket and crisper plate only, not the housing. The Kalorik 5 quart air fryer records dishwasher safe as yes, while the Magic Bullet air fryer, which lists a nonstick aluminum interior, records it as no. Nonstick aluminum and dishwashers are a poor combination for a reason worth understanding: dishwasher detergents are strongly alkaline, and alkaline chemistry attacks aluminum and degrades the bond between coating and substrate. The coating does not peel on the first cycle. It dulls, then it stops releasing, then it lifts at an edge.
If the manual permits the dishwasher and you want the coating to last, hand washing is still the gentler option. If the manual forbids it, that is not a suggestion.
What actually removes baked on residue
The technique that works on every coated surface is the same: soften first, scrub second. Hot water and a little dish soap left to sit for fifteen or twenty minutes will lift most of what a scourer would otherwise have to grind off. A soft brush or a nylon pad finishes the job. Wooden or silicone tools handle the corners.
What to avoid is a short list and it is absolute. No metal scourers, no scouring powder, no oven cleaner, no knives or metal spatulas used as scrapers. No thermal shock, meaning no cold water into a hot basket, because the sudden contraction stresses the bond between coating and metal. And no long soaks in water for aluminum bodied parts, coated or not, because the metal will pit and discolor beneath the coating even where the coating itself looks fine.
Grill plates and rice cooker bowls are their own problems
Contact grills concentrate every one of these issues into a small area, because fat renders onto a hot plate and carbonizes there. The Tefal OptiGrill lists die cast aluminum plates with a nonstick surface, and its documentation describes the coating as free of PFOA and PFAS. The George Foreman GR0040B lists a nonstick coating as a headline feature. On any grill of this type, wiping the plates while they are still warm, not hot, is what keeps carbon from building into a layer that later needs force to remove. Once carbon has hardened, the temptation to attack it is exactly the moment coatings get killed.
Rice cooker bowls fail differently. They are usually thin coated metal, and they are scraped daily with a serving paddle, so the coating takes routine light abrasion over years rather than occasional heavy abrasion. The Zojirushi NP-HCC10XH lists a nonstick inner pan alongside a stainless steel inner lid, which is a common split: the pan is coated and the lid is not, so they need different treatment. Using only the supplied plastic or wooden paddle and never stacking anything inside the bowl during storage will do more for its life than any cleaning product.
When a coating is finished, and what to do about it
A coating has reached the end when food sticks even with oil and a preheated surface, when the surface has gone matte and porous rather than slick, or when there is visible flaking. Flaking is the point at which the part should be replaced rather than kept in service, not because of an acute hazard but because the surface underneath is bare metal in some places and coated in others, which cooks unevenly and cleans badly.
Replacement baskets and pans are available from some manufacturers and not others, and that availability is worth checking before purchase rather than after. An appliance whose only wearing part can be bought separately has a much longer useful life than one where a worn basket means a new machine. When comparing models, the coating type and the removable part strategy are visible in the specifications if you look for them. Across the air fryer listings the split between ceramic and traditional coatings is wide, and across the electric grill listings the distinction between fixed and removable plates decides how the appliance can be cleaned at all. Where a listing gives contradictory dishwasher guidance, treat the more cautious answer as the operative one until the manual says otherwise.
